Serpa cheese heads to Córdoba festival with AI-monitored ageing technology

The Serpa cheese producers' association will take part in the International Cheese Festival in Córdoba from 12 to 15 November, sharing a stand with Serpa municipality. Producers will enter Serpa PDO cheese in the World Cheese Awards, which host thousands of cheeses from dozens of countries. The association will also present QI 4.0, a project using sensors and machine-learning algorithms to monitor the ageing chamber. An app still in development will alert makers when conditions stray from the ideal. The aim is steadier quality and less food waste without altering the cheese's identity.
