Portuguese cooking is not obviously vegetarian territory, and yet the everyday base of it (beans, greens, bread, olive oil, chickpeas) mostly is. The projects here work from that rather than importing a foreign menu.
O Cais serves food and runs a shop out of a 1765 building in Silves. Essência cooks plant-based for guests at its off-grid retreat near Aljezur, and Cristaland does the same for events in Lagos. Vegoa organises the vegan side of it as a platform and association, and Peneda Eco Farm grows the vegetables in the far north.
