Terras de Sal is a cooperative in Castro Marim, Algarve, bringing together producers of traditional sea salt and fleur de sel harvested from the Guadiana river's alluvial salt pans.

Terras de Sal, CRL is a cooperative based in Castro Marim, in the eastern Algarve, that unites local producers of traditional sea salt and fleur de sel. Its mission is to promote, valorise and commercialise these high-quality artisanal products while safeguarding the centuries-old tradition of salt farming in the region — a technique whose grid-like salt pan layout is believed to date back to Roman times, when salt was essential for producing garum, a fermented fish sauce exported across the empire. The cooperative's salt is harvested from the alluvial deposits of the Guadiana river, which lend it a distinctive mineral richness. Each harvest season yields two to three collections, spaced four to five weeks apart. The prized fleur de sel is formed by a thermal differential in the crystallisation ponds, producing a delicate surface layer historically known as "coalho", which is hand-collected daily at the end of the day. Beyond preserving traditional methods, Terras de Sal invests in product research and development to bring innovative salt-based products to a wider public, offering ranges spanning natural, gourmet, food-service (HORECA), grocery and bulk formats. By supporting local salt workers and reviving interest in this heritage craft, the cooperative contributes to the economic sustainability and cultural identity of Castro Marim, while promoting responsible use of the region's natural resources. The cooperative has also participated in cultural and scientific initiatives related to salt heritage, including documentaries and biotechnology research projects connected to the salt pans, reinforcing its role as a guardian of both an economic activity and a living regional tradition.

To ensure the continuity and sustainability of traditional salt farming in the Castro Marim region, promoting the use of local natural resources, dignifying the profession of salt worker, and contributing to local development and cultural identity.

The cooperative seeks to expand recognition and commercialisation of its traditional sea salt and fleur de sel products across gourmet, retail and food-service markets.
